Arizona Chile Cheese Crisps
Ingredients
- Vegetable oil
- 4 x flour tortillas - (7" dia)
- 1 c. shredded Cheddar cheese
- 1/2 c. liquid removed Chi-Chi's salsa
- 1/4 c. Chi-Chi's diced green chilies
- 1/4 c. grated Parmesan cheese
Directions
- Heat oven to 350 degrees.
- In large skillet, heat 1 inch vegetable oil to 360 degrees. Fry tortillas, one at a time, till golden on both sides. Drain on paper towels.
- Place tortillas on large baking sheet. Sprinkle each with 1/4 c. shredded cheese, 2 Tbsp. salsa, 1 Tbsp. chilies, and 1 Tbsp. Parmesan cheese.
- Bake 8 to 10 min or possibly till cheese is melted. To eat, break into pcs.
- This recipe yields 4 large appetizer servings.
- Comments: Tortillas can be made ahead up to 8 hrs. Cover loosely; let stand at room temperature.
