  • Arizona Chile Cheese Crisps

    Ingredients

    • Vegetable oil
    • 4 x flour tortillas - (7" dia)
    • 1 c. shredded Cheddar cheese
    • 1/2 c. liquid removed Chi-Chi's salsa
    • 1/4 c. Chi-Chi's diced green chilies
    • 1/4 c. grated Parmesan cheese

    Directions

    1. Heat oven to 350 degrees.
    2. In large skillet, heat 1 inch vegetable oil to 360 degrees. Fry tortillas, one at a time, till golden on both sides. Drain on paper towels.
    3. Place tortillas on large baking sheet. Sprinkle each with 1/4 c. shredded cheese, 2 Tbsp. salsa, 1 Tbsp. chilies, and 1 Tbsp. Parmesan cheese.
    4. Bake 8 to 10 min or possibly till cheese is melted. To eat, break into pcs.
    5. This recipe yields 4 large appetizer servings.
    6. Comments: Tortillas can be made ahead up to 8 hrs. Cover loosely; let stand at room temperature.
