  • Apricot Scones

    Ingredients

    • 1 1/2 c. Flour
    • 1 c. Oat bran
    • 2 Tbsp. Sugar
    • 1 Tbsp. Baking pwdr
    • 1/2 tsp Salt
    • 1/2 c. Butter
    • 1 x Egg, lightly beaten
    • 3 Tbsp. Lowfat milk
    • 1 can (17oz) apricot halves, Liquid removed and minced

    Directions

    1. Preheat oven to 400F.
    2. Combine flour, oat bran, sugar, baking pwdr and salt. Cut in butter till mix resembles fine crumbs. Stir in egg, lowfat milk and apricots just till dough leaves sides of bowl.
    3. Divide dough in half; place on a lightly floured board and coat both sides with flour to seal. Form a 6" round 1" high circle; cut into 6 wedges with a floured knife. Seperate wedges and bake 12 min on an ungreased cookie sheet till golden. Cold slightly on a wire rack; serve hot.
