  • Apricot Carrot Muffins

    Ingredients

    • 1 c. All-Purpose Flour
    • 1/2 c. Whole Wheat Flour
    • 1 Tbsp. Baking Pwdr
    • 1/4 tsp Salt
    • 1/2 c. Sugar
    • 2 x Large eggs
    • 3/4 c. Lowfat milk
    • 3 Tbsp. Avocado Oil
    • 1 c. Carrots coarsely grated
    • 3/4 c. Dry Apricots minced or possibly 3/4 c. Whole Raisins
    • 1/2 c. Walnuts coarsely minced

    Directions

    1. In a large bowl mix flour baking pwdr and salt. In another bowl whisk sugar and Large eggs. Whisk in lowfat milk and oil. Fold in carrots apricots and nuts. Add in to flour mix. Mix till just blended. Spoon into 12 2 3/4" muffin tin c. greased with additional avocado oil. Bake in a 375 oven for about 20 min till just springy to the touch. Serve hot.
