Carrot Muffins (No Fat)
Ingredients
- 1 1/2 c. Carrots, grated
- 1 tsp Cinnamon
- 1/8 tsp Cloves
- 1 tsp Orange peel
- 2 x Large eggs
- 4 Tbsp. Raisins
- 1 tsp Vanilla
- 6 Tbsp. Flour
- 1 tsp Baking Pwdr
- 2/3 c. Powdered lowfat milk
- 1 x Amount of brown sugar Twin to equal 20 teaspoon sugar
Directions
- Mix all ingredients. Spray muffin tin with Pam. Divide equally. Bake at 350 F. for 25 min.
- Makes 12 muffins that is TWO SERVINGS of SIX (yes 6) MUFFINS EACH. For each six (6) muffins the following counts apply: 1 recipe. Can substitute Egg Beaters for the Large eggs and use Equal instead of Sweet and Low. Freeze well.
