Apples & Cinnamon Croissant Bread Pudding

- 3 large baked (store bought) Croissants, cubed
- 3 Large Eggs (beaten)
- 1/4 cup Heavy Cream
- 2 apples peeled, cored, sliced on a mandoline
- 1-1/2 teaspoon Cinnamon
- A few pinches nutmeg
- 3 tablespoon brown sugar
- 1-1/2 teaspoon Pure Vanilla Extract
- Optional chopped pecans
Directions
- Pre Heat Oven 350 F
- Using an oval or round baking dish spray with your favorite cooking spray (I use Bakers Joy)
- In a mixing bowl add cubed croissants, beaten eggs, cream, and stir with a sturdy spatula, add cinnamon, nutmeg, brown sugar, vanilla extract and stir again, transfer into baking dish
- Add sliced apples in a fan pattern around the entire dish, add chopped pecans across the top
- Place into the oven on the middle rack bake for 24 minutes or until golden brown and apples are tender
- Serve with Frozen Vanilla Yogurt, Ice Cream or Whipped Cream, if desired
