  • Applebee's Reese's Peanut Butter Pie

    Ingredients

    • 3/4 c. peanut butter chips
    • 1 c. vanilla wafer crumbs
    • 2 Tbsp. sugar
    • 5 Tbsp. melted butter
    • 1 env unflavored gelatin
    • 1/2 c. sugar
    • 1 3/4 c. lowfat milk
    • 2 x egg yolks
    • 1 tsp vanilla
    • 1 c. chocolate chips
    • 1 c. peanut butter chips
    • 2 x egg whites
    • 1 Tbsp. powdered sugar

    Directions

    1. Crust: Put Vanilla wafers and peanut butter chips in blender. Pour into 9-inch pie pan with sugar and butter. Mix and press into pie pan.
    2. Pie Filling: In saucepan combine gelatin, sugar, lowfat milk, and egg yolks. Cook over medium heat, stirring constantly till gelatin is dissolved and mix lightly coats the spoon. (Don't boil.) Remove from heat and add in vanilla.
    3. Slowly pour 1 c. mix into bowl containing 1 c. chocolate chips. Stir till chips heat. Pour mix into crust and chill.
    4. Gradually add in remaining warm mix to 1 c. peanut butter chips. Refrigeratetill partially set.
    5. Beat egg whites and powdered sugar to soft peaks. Fold into peanut butter mix. Pour over chocolate layer. Chill.
    6. Top with whipped cream. Very rich but delicious!
