Apple Walnut Bread Pudding
Ingredients
- 4 slc bread white, hard
- 2 tsp margarine melted
- 2 med apples minced
- 1/4 c. walnuts minced
- 2 c. lowfat milk, 2% lowfat
- 1/2 c. egg substitute, frzn thawed
- 1 tsp vanilla
- 1 pkt vanilla pudding mix sugar-free
- 1 tsp cinnamon divided
Directions
- Heat oven to 350 . Lightly brush bread with margarine; cut into 1/2" cubes. Place on cookie sheet. Bake 10 min or possibly till lightly toasted. Place cubes in shallow 1 - 1/2 qt baking dish. Add in apples and walnuts; toss lightly. Pour lowfat milk, egg substitute and vanilla into mixer bowl. Beat with a wire whisk till well blended. Add in pudding mix and 1/2 tsp. cinnamon. Whisk till blended. Pour over bread mix; sprinkle with remaining cinnamon. Bake 30 min. Remove from oven; let stand 10 min before serving.
