  • Cranberry Bread Pudding

    Ingredients

    • 2 1/2 c. fresh or possibly frzn cranberries
    • 1/3 c. maple syrup
    • 1/2 c. apple cider
    • 1 loaf Italian bread
    • 4 c. soy lowfat milk
    • 4 lrg Large eggs beaten lightly
    • 4 x ripe bananas mashed
    • 1 c. sugar
    • 1 Tbsp. vanilla extract
    • 1 Tbsp. grnd cinnamon
    • 1 Tbsp. grated nutmeg

    Directions

    1. Preheat oven to 350 degrees. Grease or possibly coat a 3-qt casserole with cooking spray.
    2. In small saucepan, combine cranberries, maple syrup and cider. Bring to a simmer over medium heat and cook, stirring occasionally, till cranberries burst and mix thickens, 7 min. Remove from heat; drain excess liquid.
    3. Tear bread into small pcs and put into large bowl. Add in soy lowfat milk, Large eggs, bananas, sugar, vanilla, cinnamon and nutmeg and mix well. Stir in cranberry mix. Transfer to prepared pan.
    4. Bake till set, about 50 min. Set casserole on wire rack and let cold slightly before serving.
    5. This recipe yields 12 servings.
