  • Apple & Pear Cobbler

    Ingredients

    • 3/4 c. unbleached all-purpose flour
    • 1 1/2 teaspoon baking pwdr
    • 1/4 teaspoon cream of tartar
    • 1/2 teaspoon salt
    • 1/4 c. lowfat sour cream
    • 3 T plus 2 teaspoon sugar
    • 1/2 teaspoon grnd cardamom
    • 1/4 teaspoon grnd cloves
    • 3 T chilled unsalted butter, cut into 6 pcs
    • 2 lbs. Golden brown Delicious apples, peeled, cored & sliced into 1/4 inch wedges
    • 2 lbs. pears, peeled, cored & sliced into 1/4 inch wedges
    • 1 T fresh lemon juice
    • 3/4 c. sugar
    • 1/4 teaspoon grnd cloves
    • 2 teaspoon vanilla extract
    • 1/4 c. all-purpose flour

    Directions

    1. Put together flour, 3 tbsp sugar, baking pwdr, cloves, cardamom and salt. Add in butter and cut in till mix resembles coarse meal. Add in lowfat sour cream and blend just till dough begins to come together. Don't form ball.Transfer dough to large plastic bag. Working through bag, form into ball and flatten into 9 inch square. Refrigerate while preparing fruit.
    2. Transfer fruit slices to 8 x 8 x 2 inch baking dish. Put together lemon juice and vanilla in small bowl. Pour over apples and toss to coat. Put together 3/4 cup sugar, flour and cloves in small bowl. Sprinkle over fruit and toss to coat. Rearrange fruit to make compact and wipe rim of dish clean. Place dough atop fruit and gently tuck edges under at 3 inch intervals. Sprinkle with remaining 2 tsp sugar. Sprinkle 1/4 cup sliced almonds over top. Place cobbler on cookie sheet and bake till crust is browned, about 40 min. Makes 6 servings. Serve warm with ice cream.
