  • Baked Apple And Pear Compote

    Ingredients

    • 4 x tart apples peeled, cored and cut into quarters or possibly sixths a handful of raisins
    • 3 x ripe but hard pears peeled, cored and cut into quarters or possibly sixths
    • 2 Tbsp. mild-flavored honey tsp. grnd cinnamon tsp. grnd nutmeg juice of 1 lemon c. apple juice
    • 1 Tbsp. whiskey

    Directions

    1. Preheat the oven to 375 degrees. Butter a baking dish large sufficient to hold all of the fruit. Place the fruit in the baking dish along with the raisins. Drizzle on the honey. Sprinkle on the spices. Mix together the lemon juice, apple juice and whiskey. Toss with the fruit. Place in the oven and bake for 45 min to 1 hour, till the fruit is very soft. Stir every 10 to 15 min.
    2. Serve either warm or possibly at room temperature.
    3. NOTES : We had it last night and enjoyed it - yum!
