  • Apple Oatmeal Waffles

    Ingredients

    • 1 c. Regular oats
    • 1 2/3 c. Flour
    • 2 1/2 tsp Baking pwdr
    • 1 tsp Grnd cinnamon
    • 1/2 tsp Salt (optional)
    • 1 c. Nonfat lowfat milk
    • 1/4 c. Maple syrup
    • 1/4 c. Orange juice )or possibly apple juice
    • 1 lrg Egg
    • 3 lrg Egg whites
    • 3/4 c. Tart apples -- finely chop
    • 1/2 c. Raisins Butter or possibly margarine Maple syrup

    Directions

    1. 1. Spread oats on a baking sheet; toast in 350 oven, stirring occasionally, till golden brown (12-15 min). Mix oats, flour, baking pwdr, cinnamon, and if you like, salt in a large bowl. In a medium sized bowl, beat lowfat milk, syrup, juice, egg and egg whites till blended. Stir in apple and raisins. Add in egg mix to flour mix; stir till proportionately moistened. 2. Preheat a waffle iron following manufacturer's directions. Grease iron; fill three-quarters full of batter. Bake till golden brown and crisp (6-8 min). Transfer to a plate and keep hot in a 200 degree oven while making remaining waffles.
    2. Offer with butter and syrup.
    3. Makes about twelve 4- inch square waffles.
