Apple Jicam Slaw
A fresh raw crunch salad that seems to go well with cooked chicken, roast beef, baked ham, or just simple as a salad with warm buttered rolls Ingredients
- 2 sweet red apples, peeled, cored, diced
- 1 small jicama, peeled, diced
- 1/4 cup flaked coconut
- 1/4 cup peanut, chopped
- Enough mayo to coat and moisten.
- If you like spice, as we do, sprinkle in 1 teaspoon red chili flakes
Directions
- Combine everything in a bowl.
- Toss well to coat.
- Cover and chill until ready to serve.
