Apple Jicam Slaw

A fresh raw crunch salad that seems to go well with cooked chicken, roast beef, baked ham, or just simple as a salad with warm buttered rolls

Ingredients

  • 2 sweet red apples, peeled, cored, diced
  • 1 small jicama, peeled, diced
  • 1/4 cup flaked coconut
  • 1/4 cup peanut, chopped
  • Enough mayo to coat and moisten.
  • If you like spice, as we do, sprinkle in 1 teaspoon red chili flakes

Directions

  1. Combine everything in a bowl.
  2. Toss well to coat.
  3. Cover and chill until ready to serve.
