  • Apple, Dried Cherry, And Walnut Salad With Maple Dressing

    Ingredients

    • 1/4 c. mayonnaise
    • 1/4 c. pure maple syrup
    • 3 Tbsp. Champagne vinegar (or possibly other white wine vinegar)
    • 2 tsp sugar
    • 1/2 c. vegetable oil Salt to taste Freshly-grnd black pepper to taste
    • 1 bag mixed baby greens - (5 ounce) (abt 10 c. lightly packed)
    • 2 x Granny Smith apples peeled, cored, and cut into matchstick-size strips
    • 1/2 c. dry tart cherries
    • 1/2 c. minced walnuts toasted

    Directions

    1. For Dressing: Whisk mayonnaise, maple syrup, vinegar, and sugar in medium bowl to blend. Gradually whisk in oil till mix thickens slightly. Season to taste with salt and pepper. (Dressing can be prepared 3 days ahead. Cover and chill. Rewhisk before using.)
    2. For Salad: Toss greens, apples, cherries, and 1/4 c. walnuts in large bowl to combine. Toss with sufficient dressing to coat. Divide salad equally among plates. Sprinkle with remaining 1/4 c. walnuts and serve.
    3. This recipe yields 6 servings.
