  • Apple And Apricot Crumble

    Ingredients

    • 85 gm St Ivel Golden brown Churn, (3oz)
    • 115 gm Plain flour, (4oz)
    • 85 gm Medium oatmeal, (3oz)
    • 85 gm Light soft brown sugar, (3oz)
    • 5 ml Grnd mixed spice, (1tsp)
    • 1 x 410 gram can apricots in fruit juice
    • 3 x Eating apples, peeled, cored and thinly sliced

    Directions

    1. Mix the flour and oatmeal in a bowl, then lightly rub in the St Ivel Golden brown Churn till the mix resembles course breadcrumbs. Stir in the sugar and mixed spice.
    2. Drain the apricots, reserving the fruit and juice separately, then place the apricots and apples in an ovenproof dish. Add in 90ml (6tsp)
    3. apricot juice and stir to mix.
    4. Spoon the crumble mix proportionately over the fruit covering it completely.
    5. Bake in a preheated oven at 180C / 350F / gas mark 4 for about 45 min, or possibly till the fruit is cooked and the topping is golden.
    6. Serve warm or possibly cool with custard, ice cream or possibly Greek yogurt.
    7. Variations:Use other mixtures of fruit such as apples and raspberries, autumn berries, apples and sultanas or possibly rhubarb and ginger, in place of the apples and apricots.
    8. Add in 25-55g (1-2oz) minced mixed nuts to the crumble mix before baking.
