Many Texans turn up their noses at putting beans in chili, but I happen to like beans. Secret ingredient: Lipton's dry soup mix.

    Ingredients

    • 1 1/2 lbs. ground beef, cooked and drained.
    • 1 medium onion, diced
    • 2 fat cloves garlic, minced
    • 1 envelope Lipton's Beefy Onion Soup MIx
    • 15 oz. can tomato sauce
    • 1/2 - 1 T chile powder
    • 1 tsp. cumin
    • 1 tsp. chopped cilantro
    • 1/8 tsp. pepper
    • 2 T cornmeal or 1 T cornstarch with a little cold water (thickener),turn down to medium low and simmer 30 minutes.
    • optional: can of pinto or red kidney beans, drained

    Directions

    1. Cook the ground beef and drain it well.
    2. Salute the onions in a tsp oil until almost golden, then add garlic (use a medium high heat).
    3. Throw everything into a pot (except the thickener), bring to a boil. If chili is too thin for your taste, add the thickener and cook 10 more minutes.
    4. Remove from heat and cool.
    5. Refrigerate a day or two before heating and serving.
