  • Angel Hair With Shrimp

    Ingredients

    • 1/3 c. Minced shallot
    • 6 x Cloves garlic, chopped
    • 1 Tbsp. Extra virgin olive oil
    • 1 c. Bottled clam juice
    • 1/4 c. Dry white wine
    • 1/2 c. Minced parsley, flat-leaf
    • 1/4 c. Minced fresh basil, or possibly 1 Tbsp. crushed dry basil
    • 1 Tbsp. Freshly grnd pepper
    • 2 x Fresh Tomatoes, abt 1/2 lb, peel, seed, diced, or possibly 1 c. minced liquid removed canned tomatoes
    • 1/2 tsp Salt, (optional)
    • 9 ounce Fresh angel hair pasta, or possibly 1/2 lb capellini
    • 1 lb Shrimp, medium, peel, devein

    Directions

    1. In a large nonstick skillet, saute/fry shallot and garlic in extra virgin olive oil over low heat till shallot is wilted, about 4 min. Add in clam juice, wine, parsley, basil, pepper, and tomatoes. Partially cover and simmer for 15 to 20 min.
    2. When sauce is almost done, fill a 5- to 6-qt (4.75 to 5.5 l) pan with water, add in salt, and bring to a boil. Add in pasta and cook for 1 to 2 min
    3. (3 to 4 min for dry capellini), till just tender to bite. Drain well.
    4. While pasta is cooking, add in shrimp to simmering sauce. Cook, stirring, till opaque throughout, 3 to 4 min. Cut to test.
    5. Divide pasta among 6 wide, shallow bowls. Spoon shrimp mix over pasta.
    6. Makes 6 servings
