Angel Hair With Lemon Garlic Sauce
Ingredients
- 1 tsp Extra virgin olive oil
- 2 x Garlic cloves, peeled & chopped
- 1/2 c. Dry white wine
- 1/4 c. Lemon juice
- 1 c. Fresh tomato, minced, (1 medium)
- 4 ounce Spinach angel hair pasta
- 1/4 c. Fresh basil, minced
- 2 Tbsp. Parmesan cheese, grated Black pepper

- 1. Bring a large pot of water to a boil over high heat and maintain at a boil.
- 2. Put the extra virgin olive oil and garlic in a saute/fry pan and cook over medium heat just till the garlic begins to brown.
- 3. Remove the saute/fry pan from the heat and pour in the wine.
- 4. Return it to the heat.
- 5. Cook for another 1 to 2 min, till the wine has been reduced by half.
- 6. Stir in the lemon juice and tomato.
- 7. Remove the pan from the heat.
- 8. Place the pasta in the boiling water and cook to desired doneness, 30 seconds to 1 minute.
- 9. Drain the pasta and put it into a hot serving bowl.
- 10. Add in the basil, Parmesan cheese, and black pepper, along with the tomato mix.
- 11. Toss and serve immediately.
