  • Angel Hair With Lemon Garlic Sauce

    Ingredients

    • 1 tsp Extra virgin olive oil
    • 2 x Garlic cloves, peeled & chopped
    • 1/2 c. Dry white wine
    • 1/4 c. Lemon juice
    • 1 c. Fresh tomato, minced, (1 medium)
    • 4 ounce Spinach angel hair pasta
    • 1/4 c. Fresh basil, minced
    • 2 Tbsp. Parmesan cheese, grated Black pepper

    5. 1. Bring a large pot of water to a boil over high heat and maintain at a boil.
    6. 2. Put the extra virgin olive oil and garlic in a saute/fry pan and cook over medium heat just till the garlic begins to brown.
    7. 3. Remove the saute/fry pan from the heat and pour in the wine.
    8. 4. Return it to the heat.
    9. 5. Cook for another 1 to 2 min, till the wine has been reduced by half.
    10. 6. Stir in the lemon juice and tomato.
    11. 7. Remove the pan from the heat.
    12. 8. Place the pasta in the boiling water and cook to desired doneness, 30 seconds to 1 minute.
    13. 9. Drain the pasta and put it into a hot serving bowl.
    14. 10. Add in the basil, Parmesan cheese, and black pepper, along with the tomato mix.
    15. 11. Toss and serve immediately.
