Angel Hair With Scallops
Ingredients
- 1 Tbsp. Extra virgin olive oil
- 3 cl Garlic
- 2 x Shallots
- 1 tsp Dry thyme
- 1/4 c. Fresh parsley
- 8 x Mushrooms
- 1 can Plum tomatoes
- 1 c. White wine
- 1 lb Scallops
- 1/2 lb Angel hair pasta Salt and black pepper Grated parmesan cheese
Directions
- Heat oil in saute/fry pan over medium heat. Saute/fry garlic and shallots till soft. Stir in thyme & parsley. Add in mushrooms. Cook a few min. Stir to mix well. Add in tomatoes. Mix well. Add in wine slowly. Increase heat to high.
- Boil and reduce liquid. Reduce heat and add in scallops. Simmer 2-3 min.
- Don't overcook. Cook pasta in pot of boiling water for about 4 min.
- Drain. Place in large bowl. Pour scallops and sauce over pasta. Season with salt and black pepper. Toss together and serve. Approximately 8-10 min.
