Angel Hair Pasta With Shrimp And Basil
Ingredients
- 2 Tbsp. extra virgin olive oil, divided
- 1/2 x (8 oz) package angel hair pasta
- 1/2 tsp minced garlic
- 1/2 lb large shrimp - peeled and deveined
- 1 x (28 oz) can Italian-style diced tomatoes, liquid removed
- 1/4 c. dry white wine
- 2 Tbsp. minced parsley
- 1 Tbsp. and 1-1/2 tsp. minced fresh basil
- 1 Tbsp. and 1-1/2 tsp. freshly grated Parmesan cheese
Directions
- 1. Bring a large pot of water to a boil, and add in 1 Tbsp. oil. Cook pasta in boiling water till al dente. Place pasta in a colander, and give it a quick rinse with cool water.
- 2. Heat remaining extra virgin olive oil in a 10 inch skillet over medium heat. Cook garlic, stirring constantly, till the garlic is tender, about 1 minute. Don't let the garlic burn. Add in shrimp, and cook for 3 to 5 min. Remove shrimp from the skillet, and set aside.
- 3. Stir tomatoes, wine, parsley, and basil into the skillet. Continue cooking, stirring occasionally, till liquid is reduced by half, 8 to 12 min. Add in shrimp, and continue cooking till the shrimp are heated through, about 2 to 3 min. Serve the shrimp mix over the pasta. Sprinkle with Parmesan cheese.
