    I love hash brown casseroles, but none of the recipes I found were exactly what I wanted. So, I made this recipe and it was a huge hit at the office potluck. For years, people would ask for this at every potluck.


    • 2 lbs. Frozen Hash Browns (shredded kind)
    • 1 can Campbell’s cream of mushroom and chicken soup
    • 1 small carton sour cream
    • 1 small carton whipping cream
    • 2 C shredded sharp cheddar and pepper jack cheese mix (or 1 cup of each)
    • ½ medium yellow (sweet) onion, chopped
    • 4 green onions, chopped
    • ¼ C butter
    • 1 C baby Portabella mushrooms, chopped
    • Italian seasoned bread crumbs (approx. ¼ - ½ C)


    1. Place frozen hash browns in 9X13 pan.
    2. Melt butter in sauté pan.
    3. Add chopped mushrooms, yellow onion and green onion. Sauté.
    4. Let cool for approximately 5 minutes.
    5. Add sour cream, whipping cream, soup and cheese to the sauté mix and blend well.
    6. Pour on top of hash browns.
    7. Sprinkle well with seasoned bread crumbs and bake at 350 for 1 hour.
