Andra's Hash Brown Casserole
I love hash brown casseroles, but none of the recipes I found were exactly what I wanted. So, I made this recipe and it was a huge hit at the office potluck. For years, people would ask for this at every potluck. Ingredients
- 2 lbs. Frozen Hash Browns (shredded kind)
- 1 can Campbell’s cream of mushroom and chicken soup
- 1 small carton sour cream
- 1 small carton whipping cream
- 2 C shredded sharp cheddar and pepper jack cheese mix (or 1 cup of each)
- ½ medium yellow (sweet) onion, chopped
- 4 green onions, chopped
- ¼ C butter
- 1 C baby Portabella mushrooms, chopped
- Italian seasoned bread crumbs (approx. ¼ - ½ C)
Directions
- Place frozen hash browns in 9X13 pan.
- Melt butter in sauté pan.
- Add chopped mushrooms, yellow onion and green onion. Sauté.
- Let cool for approximately 5 minutes.
- Add sour cream, whipping cream, soup and cheese to the sauté mix and blend well.
- Pour on top of hash browns.
- Sprinkle well with seasoned bread crumbs and bake at 350 for 1 hour.
