Alsatian Cassoulet
Ingredients
- 1 lrg Red cabbage, thinly sliced
- 2 lrg Heads cauliflower, cut into florets
- 2 c. Cooked seitan, minced
- 2 c. Unpeeled apples, sliced
- 2 c. White beans, cooked
- 2 Tbsp. Caraway seeds
- 1/2 c. Shallots, minced
- 3 c. Vegetable stock or possibly dark beer
- 1 Tbsp. Pepper
- 1/4 tsp Salt
- 1/2 c. Whole wheat flour Preheat oven to 450 deg.
Directions
- Combine all ingredietns, except flour, in a large roasting pan or possibly casserole dish. Sprinkle top with flour.
- Place in oven and cook, uncovered, for 30 min.
- Reduce heat to 250 deg. Cover and cook for 20 hrs, stirring occasionally. Serve warm.
