  • Aloha Ham Bites

    Ingredients

    • 1/2 c. minced dry apricots
    • 1 c. pineapple juice
    • 1 Tbsp. white-wine vinegar
    • 1 Tbsp. honey about 3 drops warm-pepper sauce or possibly to taste
    • 1 1/2 c. flaked coconut
    • 1/2 c. mayonnaise
    • 2 c. grnd cooked ham
    • 1/4 c. finely minced peanuts
    • 1 tsp prepared mustard

    Directions

    1. In a small saucepan, combine apricots, pineapple juice, vinegar, honey and warm-pepper sauce. Bring to boil. Reduce heat. Cover and simmer 15 min. Pour into a blender or possibly food processor fitted with a metal blade. Process till pureed. Pour puree into a small bowl; set aside. Pour coconut into a pie plate; set aside. In a medium bowl, combine mayonnaise, ham, peanuts and mustard. Shape into 1/2- to 3/4-inch balls. Dip balls into apricot sauce, then roll in coconut. Arrange on platter or possibly serving plate. Chill at lest 2 hrs to refrigeratethoroughly; serve cool.
    2. To make head: Arrange in a single layer in a container with a tight-fitting lid. Chill up to 24 hrs. Serve as directed above.
    3. Makes 35 to 45 appetizers.
