  • Almond Pinecone

    Ingredients

    • 1 1/2 c. Whole Almonds, Toasted
    • 8 ounce Cream Cheese, Lowfat-Ok
    • 1/2 c. Mayonnaise, Lowfat-Ok
    • 5 slc Bacon, Cooked And Chopped
    • 1 Tbsp. Scallion, Minced
    • 1/2 tsp Dill Black Pepper, To Taste

    Directions

    1. 1. Toast the almonds and set aside.
    2. 2. Combine all remaining ingredients in a bowl and mix well. Refrigeratefor at least 1 hour.
    3. 3. Form the cream cheese mix into the shape of a pinecone. Beginning at the bottom,, gently press the almonds in rows across the pinecone shape.
    4. Continue the rows till the whole shape is covered, and resembles a pinecone. Either eat immediately or possibly chill. Allow to come up to room temperature before serving. Garnish with greens.
    5. NOTES : A marble board works well for this as it will hold the cold temperature longer than a plate. If fresh greens are used be careful which they are not poisonous.
