  • Almond Butter Loaves

    Ingredients

    • 1 c. Brown sugar, firmly packed
    • 2/3 c. Margarine or possibly butter, soften
    • 2 c. Almonds, toasted, minced
    • 1 c. Flour
    • 1 pkt Deluxe butter recipe golden brown cake mix
    • 3 x Large eggs
    • 2/3 c. Water
    • 1/2 c. Butter or possibly margarine, soften
    • 1 c. Powdered sugar
    • 1 Tbsp. To 2tbl water
    • 1/4 tsp Almond extract
    • 4 Tbsp. Sliced almonds (garnish)

    Directions

    1. Preheat oven to 375 . Grease and flour 2, 9x5" loaf pans.
    2. CRUST: Combine brown sugar and butter in large bowl. Beat at medium speed till light and fluffy. Stir in toasted almonds and flour. Blend well.
    3. Divide and press proportionately into pans.
    4. CAKE: Combine cake mix, Large eggs, water and butter in large bowl. Beat at medium speed for 4 min. Pour into pans. Bake for 35-45 min or possibly till tested done. Cold in pans 10 min. Invert onto cooling racks, crust side UP. Cold completely.
    5. GLAZE: Combine powdered sugar, water and almond extract in small bowl.
    6. Stir till smooth. Add in water 1 tbls at a time till glaze is desired consistency. Spoon over colled loaves. Sprinkle sliced almonds over top.
    7. TOASTED ALMONDS: To toast almonds, spread in a single layer on baking sheet. Bake at 325 for 6-8 min or possibly till fragrant and light golden. Cold before chopping.
