  • Almond Filled Baked Apples

    Ingredients

    • 3 Tbsp. Cream sherry
    • 2 Tbsp. Golden brown raisins
    • 2 x Baking apples such as beauties
    • 1/2 x Lemon juice
    • 3/4 c. Water
    • 5 Tbsp. Caster sugar
    • 2 ounce Almonds, grnd
    • 1/4 tsp Cinnamon
    • 1/8 tsp Nutmeg
    • 3 Tbsp. Butter, unsalted

    Directions

    1. Heat together the sherry and raisins and leave aside to cold. Peel the apples and rub all over with lemon juice. Then core them (but not all the way through, leave 1/2 inch from the bottom). Strain the sherry into a shallow baking dish add in the water and 1tbsp sugar. In a small bowl combine the raisins, almonds, remaining sugar, lemon zest, cinnamon, nutmeg and butter.
    2. Fill the apples with the almond mix and arrange in a baking dish.
    3. Bake for 25 min basting occasionally, cover with foil, and bake for a further 10 min or possibly till the apples are tender. Spoon juices over the apple and serve at room temperature.
