  • Almond Coffee Cake

    Ingredients

    • 7 egg yolks
    • Grated peel of half lemon
    • 9 ounce grnd almonds
    • 7 egg whites
    • 3 ounce sugar
    • 5 T cherry marmalade
    • 1/2 recipe of vanilla pudding for pie filling
    • 5 ounce butter, softened
    • 3 teaspoon instant coffee pwdr
    • 16 almonds for decorating

    Directions

    1. Grease round baking dish. Heat oven to 375 degrees. Beat egg yolks with lemon peel till foamy, add in half of grnd almonds. Beat egg whites till stiff, add in sugar and beat till very stiff. Put egg white mix on egg yolk mix and add in rest of grnd almonds. Mix everything carefully. Pour into baking dish and bake on second rack from bottom for 35-40 min. Don't open door during first 20-25 min. Let cool for 2 hrs. Cut once through the middle to get 2 layers. Cover bottom layer with cherry marmalade. Set second layer on top. Mix butter with instant coffee, add in vanilla pudding (2 tbsp at a time). Cover the cake all around and decorate with almonds.
