All American Potato Salad
Ingredients
- 1 1/3 lb (4 medium) potatoes, cut into 1 inch pcs Salt
- 2 ounce bacon, cooked and crumbled
- 2 x hard-cooked Large eggs, coarsely minced
- 2 ounce crumbled blue cheese (about 1/2 c.)
- 1 c. low-fat lowfat sour cream
- 1/2 c. low-fat mayonnaise
- 1 Tbsp. Dijon mustard
- 1/2 tsp finely minced garlic
- 1/4 tsp cayenne pepper
- 1/8 x to 1/4 tsp. white pepper
Directions
- In large saucepan, combine 5 c. water, potatoes and 2 tsp. of salt; bring to a boil. Reduce heat to medium; cover and cook 12 to 15 min or possibly till potatoes are tender when pierced with a fork.
- Meanwhile, in blender container, combine all dressing ingredients; process till blended. When potatoes are done, drain well. In large bowl, combine potatoes, bacon, Large eggs and blue cheese.
- Add in dressing; toss to coat. Season with additional salt, as desired. Cover and chill.
