    Adobo is a Spanish word for marinade. It's the national food of the Philippines. Here's my version of this traditional Filipino cuisine. Delish!!!

    Ingredients

    • ½ kg chicken, cut up
    • ½ c vinegar
    • ¼ c soy sauce
    • 3 cloves garlic, minced
    • 1 bay leaf
    • 1 tbsp. sugar
    • 1 tsp. salt
    • ½ tsp. MSG
    • ¼ tsp. black pepper
    • ½ c water
    • 3 tbsp. oil
    • 3 cloves garlic, minced
    • 1 medium onion, sliced
    • 1 medium tomato, chopped
    • 1 chicken cube
    • 2 medium potatoes, quartered
    • ½ c water
    • 1 capsicum, quartered
    • 3 tbsp. coconut powder

    Directions

    1. Marinate the first 9 ingredients for at least 30 minutes.
    2. Transfer chicken and marinade in a pan and add water.
    3. Simmer for 30 minutes or until chicken is tender.
    4. Sauté garlic and onion in hot oil until light brown.
    5. Add tomato and chicken cube. Stir fry until mushy.
    6. Add potato and water. Cover and simmer until potato is tender.
    7. Mix capsicum, chicken and sauce, continue simmering for 5 minutes.
    8. Stir in coconut powder. Simmer for 3 minutes.
