Adobo Chicken
These Filipino-flavored chicken drumsticks are juicy and tender and super flavorful. They make great leftovers, too, cold or hot. Ingredients
- 2 pounds chicken drumsticks
- 1/4 cup white vinegar
- 1/4 cup tamari
- 2 garlic cloves, smashed
- 2 bay leaves
- 1/2 teaspoon peppercorns
- 1 teaspoon cilantro (optional)
Directions
- Combine all the ingredients in a large Ziploc bag and toss to coat evenly. Marinate in the fridge for 1 â 3 hours.
- Place all the ingredients in a large pot over medium heat. Cover and bring to boil, then simmer on low for 30 minutes, turning the drumsticks occasionally.
- Remove the cover and continue cooking and turning for 20 more minutes until the chicken is tender. Garnish with sliced cilantro.
