Abundance of Meatballs
This recipe came about after two things happened. #1. I won 6 pounds of frozen meatballs from a recipe contest at RecipeLion.com and #2. I received the latest issue of Better Homes & Gardens magazine. Don't get me wrong, I am always happy to win recipe contests, and I can always use free food, but six pounds of meatballs go a long way in a family of three and I didn't want to be fixing spaghetti every week for the next few months! So you can imagine my excitement when I found this recipe in the magazine and knew it would be a great use for some of those meatballs! I served these as a meat dish for supper, but the magazine was featuring them as an appetizer, and I agree a big bowl of them would be a huge hit at your next party! The glaze is sweet with just a hint of tang from the ginger and clings to the meatballs so you get a little in every bite.Plus it gives them a slight "crust" on the outside while keeping the inside tender and moist. I also loved the fact the glaze was apple juice based b/c it's something I always have on hand for Alex. I don't mind buying ingredients for one recipe, but I get really annoyed with myself when I can't find other things to make with them and they end up being wasted. Apple Glazed Meatballs Adapted from Better Homes & Gardens
24 frozen meatballs (I figured 8 for each of us as a dinner sized portion)
Place frozen meatballs in Crock-Pot. In a bowl, whisk together apple juice, soy sauce, cornstarch, brown sugar and ginger. In a skillet over medium heat, bring sauce to a boil. Cook and stir for 2 minutes until slightly thickened. Pour over meatballs. Cook on high for 2 hours. Reduce heat to low and cook 1 additional hour. Transfer meatballs to a serving bowl. Pour remaining sauce over top. Sprinkle w/ green onions.
*NOTE* I followed the directions on my bag of frozen meatballs. Check yours for cooking times.
