  • a twist on skirt steak

    Ingredients

    • 1 bottle or terryaki marinade
    • 2 lbs skirt steak
    • 1 jalepeno sliced thinnly
    • 2 lemmons or limes
    • 1 cup of rock salt,or ice cream salt(the big chunks)

    Directions

    1. in a ziplock bag,put in sliced jalepenos,marinade,lemon or lime squeezed juice
    2. stick in frig for at least a 1/2 an hour
    3. fire up the grill.my brother andi prefer charcoal of natural citrus chuncks
    4. place skirt steak on the grill,reserving some of the marinade
    5. cover the top completely with rock salt,i know it sounds crazy,i'll explain later
    6. lightly pour marinade on the salt,as not to wash it away
    7. cook for about 4-5 mins,then,and this is important,carefully pull the steak off,and shake off the rock salt,i usually do it over a bowl
    8. put steak top down on grill,and whack it good,to get the rest offand it also tenderizes it,i use the back of a chop knife.but thongs are good,and i mean whack
    9. while whacing,stand to the side ,so as not to get splattered,i learned after the fact
    10. 4-5 mins later,pull off,put on a cutting board,and slice against the grain
    11. put some toothpicks out and watch for friends take it hostage
    12. *as i said earlier,the rock salt pulls the flavor from the bottom up,it doesn't melt like you would think,and gives it a slight salt flavor,but keeps it juicey. i did this for a local bar,and the beer sales always double.i also used pineapple,raspberry,and maui terryiaki marindes,be bold and experiment.
    13. *rock salt also works well with thicker steak cuts,become a believer
