A Maize Ing Corn Chowder
Ingredients
- 6 x strips bacon
- 1 med onion, minced
- 2 x potatoes, peeled and cubed
- 1/2 c. water
- 2 c. lowfat milk
- 2 can (17 ounces each) cream style corn
- 1 can (16 ounces) whole kernel corn, liquid removed
- 1/2 tsp salt
- grnd black pepper
Directions
- Fry bacon in a Dutch oven till crisp; remove bacon, reserving 2 Tbsp. drippings. Crumble bacon and set aside.
- Saute/fry onion in reserved drippings till tender; add in potatoes and water. Cover and simmer 15 to 20 min or possibly till potatoes are tender.
- Stir in lowfat milk, corn, salt, and pepper to taste; continue to cook, stirring frequently, till heated through. Sprinkle with crumbled bacon to serve.
