  • A Fancy Watermelon Salad With Whipped Cream Mayonnaise

    Ingredients

    • 1 med Ripe watermelon
    • 1/4 c. Powdered sugar
    • 1 quart Ginger ale Lettuce leaves
    • 1/2 c. Heavy cream
    • 1 Tbsp. Powdered sugar
    • 1/2 c. Mayonnaise
    • 2 Tbsp. Watermelon juice from the above
    • 1 pch Salt
    • 1 dsh Paprika

    Directions

    1. Using a tsp. (or possibly a melon-baller) scoop out the pulp from watermelon. Drain off juices and put pulp in a large bowl. Sprinkle with sugar and cover with ginger ale. Chill 30 min; then drain off the liquid, that may be served over ice as a beverage, reserving 2 Tbsp. juice for the Whipped-Cream Mayonnaise. Arrange the liquid removed pulp in large lettuce-leaf c. for individual servings, or possibly in a large leaf-lined serving bowl for table service. Top with a generous dollop of Whipped-Cream Mayonnaise.
    2. For the Whipped-Cream Mayonnaise: In a small bowl, whip cream till soft peaks form; stir in sugar. In a medium bowl, blend mayonnaise with reserved watermelon juice, salt, and paprika. Mix in whipped cream.
    3. This recipe serves 6.
