7 Up Cake
Almost like a pineapple upside down, but simpler and less mess. Ingredients
- 1 box Duncan Hines lemon cake mix
- 4 large eggs
- 1 sm. box instant vanilla pudding
- 3/4 c. corn oil
- 1 (10 ounce) bottle 7-UP
- 2 large eggs
- 1 T flour
- 2 T cornstarch
- 1 c. crushed liquid removed pineapple
- 1 c. coconut
- 1 1/2 c. sugar
- 1 stick butter
- 1 c. minced nuts
Directions
- Put together cake mix, eggs, pudding and oil.
- Slowly add in the 7-UP. Beat well.
- Put into 9x13 pan. Bake at 350 degrees for 30-40 min.
- Blend sugar, flour and cornstarch together.
- Add in large eggs, butter and pineapple.
- Cook over medium heat until thickened (8-12 min).
- Add in coconut and nuts.
- Spread on cooled cake while mix is still hot.
