  • 7 Up Cake

    Almost like a pineapple upside down, but simpler and less mess.

    Ingredients

    • 1 box Duncan Hines lemon cake mix
    • 4 large eggs
    • 1 sm. box instant vanilla pudding
    • 3/4 c. corn oil
    • 1 (10 ounce) bottle 7-UP
    • 2 large eggs
    • 1 T flour
    • 2 T cornstarch
    • 1 c. crushed liquid removed pineapple
    • 1 c. coconut
    • 1 1/2 c. sugar
    • 1 stick butter
    • 1 c. minced nuts

    Directions

    1. Put together cake mix, eggs, pudding and oil.
    2. Slowly add in the 7-UP. Beat well.
    3. Put into 9x13 pan. Bake at 350 degrees for 30-40 min.
    4. Blend sugar, flour and cornstarch together.
    5. Add in large eggs, butter and pineapple.
    6. Cook over medium heat until thickened (8-12 min).
    7. Add in coconut and nuts.
    8. Spread on cooled cake while mix is still hot.
