  • 100 Year Old Jam Cake

    Ingredients

    • 1 cup. butter, at room temperature
    • 2 cup. sugar
    • 1 tsp vanilla
    • 5 pcs Large eggs, at room temperature
    • 1 cup. buttermilk, at room temperature
    • 2 tsp baking soda
    • 4 cup. flour
    • 1/2 tsp salt
    • 1 tsp allspice
    • 1 tsp cinnamon
    • 1/2 tsp cloves
    • 1/2 tsp nutmeg
    • 1 cup. raisins
    • 1 cup. nuts
    • 2 cup. blackberry jam

    Directions

    1. Preheat oven to 350 degrees. Grease and flour four 8-inch or possibly 9-inch cake pans, or possibly line them with parchment paper.
    2. Combine buttermilk and baking soda; set aside. Sift together flour, salt, and spices; set aside.
    3. Cream butter, sugar, and vanilla till light and fluffy. Add in the Large eggs one at a time, beating well and scraping the bowl after each addition.
    4. To the butter mix, add in half the flour mix and mix till combined. Add in half the buttermilk mix and mix till combined. Add in the rest of the flour mix and mix; then add in the rest of the buttermilk and mix. Scrape the bowl and mix well.
    5. Add in raisins, nuts, and jam; mix well. Pour into prepared pans. Bake 25 to 30 min, till a tester inserted in the center comes out clean.
    6. Place pans on wire racks to cold.
