  Hi Kathleen! You've got a great blog! I haven't tried roasting the eggplant for this pasta before...though I love roasted eggplant. It would reduce the calories...vs. sauteeing in olive oil...but I do love the taste of it sauteed in olive oil! Let me know how it is if you try it.
