About me

I am the Chef / Director of Dining Services at Mount Saint Joseph Academy in Flourtown, Pa. This will be my 7th year at the Mount where I feed 560 High School Girls. This is the only school I have ever worked at, my experience comes from Restaurant and Executive Dining. When I arrived at the Mount, I thought it would be easier to teach the girls how to eat rather than learn how to cook school foods. It seems I made the right choice.

I also run an after school culinary program that has 25 active participants. This blog covers our classes, foods we learn to prepare and foods we prepare and serve in school and all the foods I have learned to cook along my journey.

Cooking Influences

My first inspiration was my Grandmother, she loved to cook and I certainly loved to eat, she taught me the joy of eating.....

Graham Kerr was my first chef inspriation. I would watch him cook for the audience and the reaction from them was incredible......I thought what a great way to make a living, making people happy with food.

Julia Child was to be everyones inspiration she was simply a joy to behold, and then there was Mama Jennette

    Hi Dennis: Thanks for the follow. How interesting to have so many young culinary minds and hearts to fill with the love of food/good eating/good cooking! What a blessing!! My mom taught unwed moms how to cook and said it was so rewarding. What do they serve these days in an academy and how many staff memebers do you have? Where do you find your recipe ideas?       Hello Chef Dennis,
      Take a look at what I wrote about you on here. I would write more if it would let me. :-)

      I am updating pictures, adding more of my favorite cook books and updating other postings here. I was working on a web site for client of mine and worked non stop on the thing til I got it done yesterday. I needed a short week vacation and so I took it; my health is number one. Without health you have nothing at all....and great friends make life more sweet day by day.

      I met the nicest people in down town Historic Garden Grove now yesterday. I am going to be working on three restaurant reviews for RestaurantsOrangeCounty.webs.com. They will be Azteca Mexican Restaurant, Doug's Down Town Grill, and Rockin' Baja Cantina.

      Will keep you posted.

      God is answering my prayers with a lot of help from ME. :-)
