  • Zuppa Toscana Soup

    I had to take several recipes and tweak them into one. Hope you enjoy!

    Ingredients

    • 1 large onion - chopped
    • 3 TBSP minced garlic
    • bacon grease
    • 6 strips cooked bacon - save grease
    • 1/2 to 1 lb of cooked Italian Sausage
    • 6-8 large sliced potatoes (Gold yukon or red)
    • 8 tsps of chicken bouillon granules
    • 4 -6 cups of water
    • 1 cup of heavy cream
    • 2 cups of milk
    • 1 bunch Chopped kale
    • 3 cheese blend (parm, asiago cheeses)

    Directions

    1. In a large soup pot, boil 4 - 6 cups of water with chicken bouillon granules. Add clean, sliced potatoes. Add crumpled bacon and Italian sausage. While the potatoes are cooking/boiling, take your bacon grease in a skillet and add your chopped onion. Cook until caramelized. Add garlic and cook a couple more minutes. Add to boiling soup pot mixture. Add salt and pepper to taste. While the soup mix is sitll cooking, chop up your kale. After the potatoes are soft, add your cream and milk. Once it comes to a boil again, add kale and turn down your heat. Ready to serve in 5 minutes. Garnish w/cheese. Serve with garlic toast.
