    Zuppa con Pallotte di Pane (Soup with Bread Balls)

    Ingredients

    • Home-made Chicken Broth*
    • For croutons
    • 6 slices of bread, without crust
    • 2 eggs, beaten
    • 1/2 teaspoon salt
    • Pinch of pepper
    • For frying Vegetable oil

    Directions

    1. Make chicken broth.
    2. Cut slices of Italian bread. Remove crust.
    3. Cut the bread into pieces -- about 1 inch by 1 inch.
    4. Beat eggs.
    5. Dip bread pieces in the beaten egg.
    6. Fry until golden.
    7. Place the chicken broth in individual bowls.
    8. Add pieces of fried bread to the broth.
    9. Garnish with Parmesan cheese and chopped parsley (optional).
    10. Serve warm.

    12. Ingredients
    13. For chicken broth
    14. 4 to 6 quarts water
    15. 1 chicken
    16. 2 tomatoes, quartered
    17. 1 whole onion [optional]
    18. 4 celery sticks with leaves
    19. 1 teaspoon dried oregano [optional]
    20. 1 tablespoon parsley, chopped [optional]
    21. 2 chicken cubes [optional]
    22. 2 teaspoons salt
    23. 1 teaspoon pepper
    24. Directions
    25. Clean chicken, and cut into pieces.
    26. Boil a large pot of water.
    27. Add chicken.
    28. Add vegetables and seasonings.
    29. Cook for one and half hours or a bit longer.
    30. Strain broth and reserve the meat for other dishes, or alternatively, remove the meat from the chicken and then cut it up in long strips and serve it along with the broth.
