Zucchini Rounds
Do you love slathering your favorite spread on a buttery cracker? Well, I do. But, here’s a healthy, tasty alternative. Peel and slice a fresh, crisp zucchini into rounds. The mild flavor does not compete with the spread and the crunch is a low fat alternative to those crackers! Here’s a snack I fixed up to serve poolside and it was a hit – even with the kids! Ingredients
- 2 medium zucchinis, peeled and sliced into rounds 1/8” thick
- 8 ounces pimento cheese spread
- 40 toothpicks
Directions
- Slice the zucchinis into approximately 80 slices.
- Spread a scant ¾ teaspoon onto 40 of the slices.
- Top with a slice of zucchini.
- Secure with a toothpick.
