    These cookies are really tasty and a little bit healthy. In any case, a good way to get rid of extra zucchini!!

    Ingredients

    • 1-1/4 cup all purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 3/4 teaspoon cinnamon
    • 4 tablespoons I salted butter
    • 1/4 cup sugar
    • 1/2 cup light brown sugar
    • 1 teaspoon vanilla
    • 1 large egg
    • 1 cup grated zucchini (skin on)
    • 2 cups quick cooking oats
    • 1/2 cup chocolate chips
    • 1 cup raisins or cranberries

    Directions

    1. Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
    2. In a medium bowl, whisk together flour, baking soda, salt and cinnamon.
    3. In a large bowl, cream butter and both sugars. Add egg and vanilla.
    4. Little by little add flour mixture to butter mixture and beat until smooth.
    5. Mix in zucchini then oats, chocolate chips and fruit.
    6. Drop cookies by the heaping tablespoon, 2" apart on the cookie sheet.
    7. Bake about 13 minutes until golden brown.
    8. Lay out on a piece of parchment paper until completely cool.
    9. Store in an air tight container.
