Zucchini Cookies
These cookies are really tasty and a little bit healthy. In any case, a good way to get rid of extra zucchini!! Ingredients
- 1-1/4 cup all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon cinnamon
- 4 tablespoons I salted butter
- 1/4 cup sugar
- 1/2 cup light brown sugar
- 1 teaspoon vanilla
- 1 large egg
- 1 cup grated zucchini (skin on)
- 2 cups quick cooking oats
- 1/2 cup chocolate chips
- 1 cup raisins or cranberries
Directions
- Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt and cinnamon.
- In a large bowl, cream butter and both sugars. Add egg and vanilla.
- Little by little add flour mixture to butter mixture and beat until smooth.
- Mix in zucchini then oats, chocolate chips and fruit.
- Drop cookies by the heaping tablespoon, 2" apart on the cookie sheet.
- Bake about 13 minutes until golden brown.
- Lay out on a piece of parchment paper until completely cool.
- Store in an air tight container.
