  • Zucchini & Cheese Gratin

    Delicious and beautiful...the French way. Serves 4-6 Prepared in 25 minutes Cooks in 35 - 45 minutes.

    Ingredients

    • 4 T. butter, plus extra for greasing the baking dish
    • 6 zucchini, slices med. thickness
    • 2 T. chopped fresh tarragon
    • 2 C. grated Gruyere cheese
    • l/2 c. milk
    • l/2 c. heavy cream
    • 2 eggs, beaten
    • freshly grated nutmeg
    • salt and pepper

    Directions

    1. Preheat oven to 350 degree F.
    2. Grease large shallow baking dish
    3. Melt butter in large saute pan over medium heat
    4. Add zucchini, saute for 4-6 minutes turning slices occasionally until browned on both sides
    5. Remove from pan. Drain zucchini on paper towels and season with salt and petter.
    6. Spread half zucchini over bottom of baking dish. Sprinkle with half the Tarragon and l/3 of cheese.
    7. Repeat layers once again.
    8. Mix together milk, cream and eggs in small bowl and season with nutmeg, salt and pepper.
    9. Pour liquid over zucchini, sprinkle top with remaining cheese.
    10. Bake in preheated oven for 35-45 minutes until it's is set in the center and golden brown
    11. Remove from oven and let stand 5 minutes before serving.
