Zucchini & Cheese Gratin
Delicious and beautiful...the French way. Serves 4-6 Prepared in 25 minutes Cooks in 35 - 45 minutes. Ingredients
- 4 T. butter, plus extra for greasing the baking dish
- 6 zucchini, slices med. thickness
- 2 T. chopped fresh tarragon
- 2 C. grated Gruyere cheese
- l/2 c. milk
- l/2 c. heavy cream
- 2 eggs, beaten
- freshly grated nutmeg
- salt and pepper
Directions
- Preheat oven to 350 degree F.
- Grease large shallow baking dish
- Melt butter in large saute pan over medium heat
- Add zucchini, saute for 4-6 minutes turning slices occasionally until browned on both sides
- Remove from pan. Drain zucchini on paper towels and season with salt and petter.
- Spread half zucchini over bottom of baking dish. Sprinkle with half the Tarragon and l/3 of cheese.
- Repeat layers once again.
- Mix together milk, cream and eggs in small bowl and season with nutmeg, salt and pepper.
- Pour liquid over zucchini, sprinkle top with remaining cheese.
- Bake in preheated oven for 35-45 minutes until it's is set in the center and golden brown
- Remove from oven and let stand 5 minutes before serving.
