Yellow Squash with Fragrant Rice

- 2 yellow squash – skinned and sliced
- 5 cloves of garlic – chopped
- 1 red onion – sliced
- Dashes of red pepper flakes
- Dashes of salt
- Olive oil
- Grated Romano
- For the Rice:
- 2 cups uncooked rice
- 1 tsp. brown sugar
- ½ tsp. curry powder
- Dash of turmeric
Directions
- Heat a large frying pan with a drizzle of olive oil. Add the sliced onion and garlic and sliced squash, season with salt, pepper and red pepper flakes. Gently, sauté until the squash is slightly golden.
- For the Rice:
- Cook the rice as directed adding the spices to the water used for cooking the rice.
- Plate the rice and top with the sautéed squash, drizzle olive oil, dash of red pepper flakes and grated Romano cheese.
