    Yellow Cake Pumpkin Bars

    This is a yummy pumpkin bar based on yellow cake mix. It's light and tasty. Enjoy!

    Ingredients

    • Crust and Filling:
    • 1 (18.25 ounce) package yellow cake mix
    • 1/2 cup melted butter
    • 3 eggs
    • 2 (15 oz) cans pumpkin
    • 1 (12 oz) can evaporated milk
    • 1/3 cup white sugar
    • 1 tsp cinnamon
    • 1/2 tsp ground nutmeg
    • 1/8 tsp ground cloves
    • 1/4 tsp ground ginger
    • Topping:
    • 1/4 cup white sugar
    • 1 tsp cinnamon
    • 1/4 cup butter
    • 1 cup reserved cake mix

    Directions

    1. Preheat oven to 350 F (190 degrees C). Lightly grease the bottom of a 9x13 inch pan.
    2. Pour a cup of yellow cake mix into a mixing bowl; set aside.
    3. Combine remaining cake mix, 1/2 cup melted butter and 1 egg; mix well. Press into the baking pan with hands.
    4. Combine pumpkin, 2 eggs, 1/3 cup sugar, spices, and milk in a medium size mixing bowl; mix until smooth and creamy. Pour evenly over the crust in the pan.
    5. Pour the sugar and cinnamon into the mixing bowl containing the 1 cup of yellow cake mix. Cut in the butter until the mixture looks crumbly. Sprinkle this mixture over the pumpkin filling.
    6. Bake for 45 minutes or until a knife inserted into the bars come out clean. Let cool before cutting.
    7. If you don't have all the spices for the batter, you can substitute 1-1/2 tsp pumpkin pie spice. May be refrigerated after cooling.
