I had this at a pot luck here in Seacliff near Santa Barbara. It is really delicious and super easy to make. Great to take to a pot luck! Goes great with grilled salmon or other fish.

    Ingredients

    • 1 head cabbage, chopped
    • 4 green onions, sliced
    • 1 package Top Ramen Noodles, chicken flavor
    • 1/4 cup sesame seeds
    • 1/4 cup slivered almonds
    • 1 can mandarin oranges, drained or chopped fresh naval oranges (optional)
    • Dressing:
    • 1/2 cup vegetable oil
    • 1/8 cup sugar
    • 3 Tbsp white or rice vinegar
    • 1 flavor packet from the Top Ramen Noodle package

    Directions

    1. Put chopped cabbage and green onions in a serving bowl.
    2. Heat oven to 375 degrees. Crumble ramen noodles on a cookie sheet. Sprinkle on sesame seeds and slivered almonds. Bake until just lightly browned, 5-8 minutes. Watch carefully as they brown quickly.
    3. Combine the salad dressing ingredients and whisk to blend. Just before serving, combine all ingredients and add oranges if you desire. Can be mixed ahead of time, but will lose some crunchiness.

As a variation you can add broccoli or red cabbage sliced and chopped for color. Also, you can substitute sunflower seeds for sesame seeds.
