Winter Vegetable Beef Stew
Mellie's Beef Stew Ingredients
- 3 onions chopped
- 2 T butter
- 1 lb. lean ground beef
- 1 garlic clove, minced
- 4 cups beef stock
- 2 large cans whole tomatoes
- 1 cup diced potatoes
- 1 cup diced celery
- 1 cup diced carrots
- 1 cup diced green beans
- 2 T red wine vinegar
- 2 T. chopped parsley
- 1/2 t. basil
- 1/2 t. thyme
- salt & pepper to taste
Directions
- In a soup kettle, cook the onions in butter until they are golden and tender.
- Stir in the ground beef & garlic.
- Drain.
- Cook until the meat is brown.
- Add remaining ingredients and bring to a boil.
- Reduce heat and simmer for 1 1/4 hours.
