    I took this salad idea from my favorite local bar. It's one of very few salads that blows my skirt up and makes me actually crave veggies.

    Ingredients

    • 3 cups baby spinach, washed and dried
    • 2 slices of bacon, crumbled
    • 1 ounce blue cheese
    • 1/8 cup dried cranberries
    • 3 ounces grilled shrimp
    • 1/8 cup diced red onion
    • 1 egg, hard boiled and cut in chunks
    • 1 cup grape tomatoes, halved
    • 2 Tablespoons fat-free raspberry vinaigrette dressing

    Directions

    1. Combine all the ingredients. Toss with a Raspberry Vinaigrette dressing. Serve immediately.
