Wimberly Salad Remake
I took this salad idea from my favorite local bar. It's one of very few salads that blows my skirt up and makes me actually crave veggies. Ingredients
- 3 cups baby spinach, washed and dried
- 2 slices of bacon, crumbled
- 1 ounce blue cheese
- 1/8 cup dried cranberries
- 3 ounces grilled shrimp
- 1/8 cup diced red onion
- 1 egg, hard boiled and cut in chunks
- 1 cup grape tomatoes, halved
- 2 Tablespoons fat-free raspberry vinaigrette dressing
Directions
- Combine all the ingredients. Toss with a Raspberry Vinaigrette dressing. Serve immediately.
