    Wild berry and dark chocolate pie

    Wild berries and dark chocolate make a decadent dessert from this simple and easy pie.

    Ingredients

    • 1 pastry shell, (9 inch unbaked)
    • 450 g mixed berries, fresh or frozen
    • 3 tbs brown sugar (Muscovado)
    • 1 tsp rum essence
    • 50 g chocolate with at least 80 % cocoa, chopped
    • 150 g chocolate with at least 40 % cocoa, chopped
    • 150 ml milk
    • 150 ml whipping cream
    • 1 egg, beaten

    Directions

    Coat the bottom and the sides of the greased pie dish. Remove excess dough from the sides. Cover the dough with baking paper and dried beans. Bake 10-15 minutes in the oven at 180˚C or until golden. Remove from the pan to cool completely.

    If the fruits (strawberry, blackberry, raspberry, cherry, black currant) are fresh, wash and clean them before using. If frozen, thaw first. Combine fruit, sugar and rum in a pan and gently simmer over low heat for 5 minutes until the sugar is dissolved and the mixture thickens slightly. Strain the stewed fruit, but save the sauce.

    Melt chocolate in a mixture of milk and heavy cream over low heat, stirring constantly.

    Add egg, stir vigorously. Allow the mixture to boil briefly and immediately remove from the heat.

    Distribute the stewed fruit evenly on the baked pie shell and cover with the chocolate mixture.
    7.
    Cool at room temperature. Serve the pie with the saved fruit sauce.
