  • Whole Wheat Quick Bread

    Ingredients

    • 1 1/2 c. whole wheat flour
    • 1 c. white flour
    • 1/2 c. quick-cooking oatmeal
    • 1/4 c. brown sugar
    • 2 teaspoon baking pwdr
    • 1/2 teaspoon baking soda
    • 1/4 to 1/2 teaspoon salt
    • 1 tbsp. finely shredded orange peel
    • 1 3/4 c. buttermilk or possibly sour skim lowfat milk
    • 1 egg white
    • 1/8 c. shelled sunflower seed or possibly 1/4 c. minced walnuts
    • 1 tbsp. wheat germ
    • 1 teaspoon honey, if you like
    • 1 tbsp. sunflower seeds, if you like for garnish

    Directions

    1. Preheat oven to 350 degrees. In large bowl, combine flours, oatmeal, brown sugar, orange peel, baking pwdr, baking soda and salt till well blended. Add in lowfat milk and egg white, stir only till ingredients are moistened. Mix in sunflower seeds and/or possibly walnuts.
    2. Lightly oil a 1 1/2 qt casserole dish. Lightly sprinkle with the wheat germ. Pour batter into the prepared dish. Bake for 50 or possibly 60 min or possibly till wooden pick inserted into center of loaf comes out clean. If necessary, cover loaf with foil during last 15 min of baking to prevent overbrowning.
    3. Cold in casserole for 10 min; turn bread onto wire rack. If you like, brush top of loaf with 1 tsp. honey and sprinkle with additional Tbsp. of sunflower seeds. Serve hot or possibly cool. Makes 1 loaf.
